How to Roast a Lamb on a Spit

A rotisserie skewer is the first thing you’ll need. The skewer should be at least 1200mm long, have a point at one end, and be capable of being attached to a motor.

Importance of Using a Counterweight

Cooking on a spit can be rewarding, but in order to achieve a nice and even cook, the meat on the skewer must be balanced. If you’re cooking chicken or boneless meat, this can be a breeze. However, when cooking a whole animal, such as a pig or lamb, this can be difficult at times.

Marinade a Whole Lamb for Spit Roasting

My favourite type of spit roasting is cooking a whole lamb on a spit. Sure, certain cuts of lamb, such as a leg of lamb or lamb shoulders (used for gyros), are delicious on a spit roast, but nothing beats a whole lamb on the spit.

How Much Charcoal Does a Spit Roaster Needs?

As a general rule, 1kg of charcoal is required for every charcoal of meat. This will depend on the weather conditions, such as which way the wind is blowing, as well as the thickness of your meat. For example, if you’re cooking gyros, the cooking time will vary greatly depending on whether your gyros are thick and fat or long and thin.

Attaching a Pig on a Spit Roaster

Splash some olive oil over the pig and rub it in. The most important thing is to ensure that you cover everything. Once the outside of the pig has been coated in oil, rub in some salt liberally on both the inside and outside of the pig.
