Perfectly Roasted Chicken on a Jumbuck Mini Spit

Nothing compares to a delicious roasted chicken. It’s the ideal meal for any occasion because it’s juicy, soft, and flavorful. Yet, unless you have a Jumbuck mini spit, roasting a chicken can be tricky. In this blog post, we’ll demonstrate how to roast a whole chicken on the Jumbuck mini spit.

Method

  1. Grab some paper towels and pat your chickens dry this will help to create a nice crispy skin!

2. Now is the time to truss your birds using butcher’s twine. In order to prevent the wings and legs from flapping and burning during cooking, you basically need to secure them in place.

3. Use your favourite chicken rubs to season the chicken. Two outstanding Australian rubs are used in the recipe for today’s meal. Meat Graffiti Charcoal Chicken Rub and Smokey Chipotle Atomic Chickens.

4. Use chicken prongs and a double-ended prong, if available, to secure your chickens on the skewer. For a pro tip to make sure your skewer is balanced properly, place your chickens facing opposite directions.

5. Light your charcoal then, place your skewer onto the spit and turn on the motor.

6. It’s time to check the internal temperature of your chickens after 85 minutes of high heat cooking. We are looking for anything above 75 degrees celcius. Which is food safe for chicken.

7. Using the delicious Kosmos Q Raspberry Chipotle sauce for an extra flavour, remove from the spit and serve immediately.
