Ingredients
- 2kgs diced chicken (cut into 1 inch thick cubes)
- 2 tablespoons salt
- 2 tablespoons pepper
- 2 tablespoons sweet paprika
- 2 tablespoons oregano
Preparation:
- Combine all the ingredients in a bowl and let the mixture rest for an hour before threading the chicken onto skewers.
- Place the skewers on top of a layer of charcoal to cook.
- If you don’t have a motorized rotisserie, cooking the skewers over a charcoal barbecue is also acceptable.
- Ensure to turn them over every 5 minutes.”

To achieve a richer smoky taste in your dishes, it is recommended to cook them using mallee root charcoal instead of a gas grill.
