Like many Greek families, ours normally observes the long-standing custom of roasting a whole lamb on a spit to mark most major occasions. The entire family gathered around to marvel at the sight of a full lamb spinning over charcoal for four hours while trying to pinch that tiny portion of meat without getting burned.

How to Cook a Whole Lamb on a Spit Rotisserie
For Easter, there are a variety of additional ways to cook lamb on a spit if you’re still not comfortable doing so with a full lamb:
Lamb leg that has been butterflied and cooked in a rotisserie basket
Cook one or two lamb legs, then attach them to the rotisserie skewer with prongs.
Lamb shoulder portions should be cut into fillets and cooked using gyros discs.
Cook either the front or back half of the lamb after chopping it in half.
