How high do I Spit Roast Meat Over Charcoal?

What is the best cooking height for spit cooking?

The method we use to choose the ideal height for your meat to be above your charcoal while spit roasting will be covered in this article. Spit roasting is enjoyable and can be very rewarding, but there are a lot of factors to take into account.

The 5 to 8-second guideline is the most effective approach to determining the ideal height for spit roasting. That is a rather straightforward idea; your hand shouldn’t burn for more than 5 to 8 seconds while it is held above the fuel source. To achieve the proper balance between a flavorful crust and cooked through, the meat should be elevated to that height above the hot BBQ lump charcoal. Although it is merely a tutorial, keep in mind that it will get you started.

The length of time you hold your hand differs from person to person because each person’s threshold for pain is different. You can repeat the ideal time and height for all upcoming cooks and get reliable spit-roasting outcomes when you do.

Cooking gyros is the only scenario in which this rule does not hold true. In gyros, the outer layer of flesh is often shaved over a long period of time. Because of this, you should cook the outer layer as rapidly as you can. I usually cook gyros at a high temperature where I can’t keep my hand at arm’s length for more than two seconds after seasoning it with yiros seasoning. In order to slow down the process a little, I’ll lift the skewer a little higher if I’m not cutting as frequently and the outside layer is beginning to burn.
