How to cook Amazing Barramundi on a Spit Rotisserie

Barramundi is an iconic fish in Australian cuisine, and it’s no surprise why – this delicious fish boasts a delicate, sweet, and buttery flavor that has made it a favorite among Aussies. It is a versatile fish that can be cooked in many ways, including grilling, baking, or frying.

However, one of the best ways to cook Barramundi is by using the Cyprus Spit, which involves cooking the fish over live fire on a spit rotisserie basket.

This cooking technique not only imparts an incredible smoky flavor to the fish but also helps to lock in its natural juices, resulting in a succulent and flavorful dish. Additionally, Barramundi is a healthy fish, high in omega-3 fatty acids and protein, making it an excellent choice for those looking to maintain a healthy and balanced diet.

To make this recipe, you’ll need the following.

Ingredients:

  1. Whole Barramundi
  2. Kosmos Q SPG rub
  3. Butter
  4. Lemon juice

Procedure:

  1. Prepare your spit rotisserie basket by attaching it to the skewer

2. Season the inside and outside of the Barramundi with Kosmos Q SPG rub, ensuring that the seasoning is evenly distributed. The Kosmos Q SPG rub is the perfect accompaniment to the fish, as it enhances its natural flavors.

3. Preheat a chimney of lump charcoal and add it to the spit rotisserie once lit.

4. Once the coals are hot, start spinning the basket.

5. Allow the fish to cook for about 25-35 minutes. Now, once the fish reaches an internal temperature of 145F or 62C, you’ll know it’s ready. Alternatively, you can test the doneness by gently twisting and flaking the fish with a fork. If it flakes easily and loses its translucent appearance, it is ready to be served.

6. Once the fish is cooked, remove it from the spit rotisserie and serve it with the lemon-butter sauce. Garnish with fresh herbs such as parsley, cilantro, or dill to add some color and extra flavor.
