It can be pretty intimidating to cook a whole pig on a spit roaster for the first time. Although I’ve only ever made it a few times because I prefer to spit-cook whole lambs, I must say that this recipe is definitely worth trying because of its Mediterranean flavour.
Ingredients:
- 15-20kg (approximately) whole pig
- 15 cloves garlic – crushed
- 200g salt
- 100g freshly ground pepper
- 50g oregano
- 3 crushed onions (in a food processor)
- 2 sprigs rosemary
Method:
- Continue to rub the surface with the dry ingredients. Make sure to season the stomach’s interior as well.
- Once the meat absorbs the delicious juices from the onions, smear the crushed onions and garlic within the stomach cavity.
Attaching it to the spit:
- Stainless steel wire, two large prongs, one back brace, two leg brackets, and a skewer at least 1200mm long are all required. All of the essential clamps and prongs are included in our advanced spit roast packs.
- Then, Put the skewer through the pig’s front and back cavities.
- Pierce the back brace through the pig’s spine so that the flat plate is on the animal’s back and the U-shaped back brace straddles the skewer.
- A large prong should be inserted through each set of legs.
- Use some wire to hold the legs in place after bending them to fit inside the V-shaped leg brackets. To keep the juices from the onions and garlic inside the stomach, stitch up the cavity using wire or a needle and thread.
- Lastly, If you can’t stretch the animal’s front legs, use some stainless steel wire to secure it to the skewer.
Cooking time:
Your cooking time will be affected by a variety of factors; but, to be on the safe side, allow about 6 hours. You may always move the charcoal to the side and bring the pig to the top of the spit roaster if it’s ready a little earlier so it keeps warm without really continuing to cook.
Use a digital cooking thermometer to check the internal temperature of the beef’s legs, which are the fleshiest area. If it reaches 75°C, the meat is considered done. Use few paper towels to dry the skin if it is wet; else, getting cracking would be difficult. Because it’s so hot, don’t forget to wear some heatproof gloves!
