Ingredients:
- 5 kg beef
- 100g salt
- 20g freshly ground pepper
- 2 teaspoons chili paste
- 2 heads garlic crushed
- tablespoons oil
- 100 ml oil
- 100 ml lemon juice
- 1 tablespoon salt
- long sprigs rosemary
Preparation:
- Combine finely chopped rosemary, salt, pepper, chili paste, crushed garlic, and 3 tablespoons of oil to make a seasoning mixture.
- Rub this mixture all over the meat, making sure to coat it thoroughly.
- Then, make about 20 small incisions in the meat and insert additional rosemary sprigs.
- For the basting mixture, mix 100 ml each of olive oil and lemon juice with 1 tablespoon of salt. Use a brush made from tying 3 long rosemary sprigs together to apply this mixture over the meat every 20 minutes.
