Roasted Beef Chili with garlic

Ingredients:

  • 5 kg beef 
  • 100g salt 
  • 20g freshly ground pepper 
  • 2 teaspoons chili paste 
  • 2 heads garlic crushed 
  • tablespoons oil 
  • 100 ml oil 
  • 100 ml lemon juice 
  • 1 tablespoon salt 
  • long sprigs rosemary

Preparation:

  • Combine finely chopped rosemary, salt, pepper, chili paste, crushed garlic, and 3 tablespoons of oil to make a seasoning mixture.
  • Rub this mixture all over the meat, making sure to coat it thoroughly.
  • Then, make about 20 small incisions in the meat and insert additional rosemary sprigs.
  • For the basting mixture, mix 100 ml each of olive oil and lemon juice with 1 tablespoon of salt. Use a brush made from tying 3 long rosemary sprigs together to apply this mixture over the meat every 20 minutes.
