Salt and Vinegar Chicken Wings on Auspit Spitmate

  • Cooking time: 45 to 60 minutes

Start by washing and pat-drying one or two kilograms of chicken wings with a paper towel. Up to 3 kg of wings may be handled with ease by the Spitmate junior roasting basket featured in this post.

Mix through the chicken wings after lightly coating with oil. Any oil will work, but olive oil has such a flavour we really like.

Put the wings into the Auspit Spitmate and tighten the wing nut to keep them on the skewer.

For 45 to 60 minutes, roast over hot coals, allowing the Spitmate and hot coals to work their magic.

Use heat-resistant gloves to remove the Spitmate off the skewer once the wings are a golden brown colour. Like all Auspit accessories, the Spitmate is made of durable 304-grade stainless steel and is simple to clean.
