Peri Peri Chicken Seasoning Recipe

For this recipe you will need the following ingredients:

1 x Chicken

1 x Peri Peri Chicken Rub

Olive Oil

These are the main ingredients used if you wish to try making your own peri peri chicken seasoning. You can change the amounts of each to your liking.

  • 6 parts Sweet paprika
  • 6 parts Garlic powder
  • 3 parts Onion powder
  • 3 parts Oregano
  • 2 parts Cayenne pepper
  • 1 part Smoked paprika
  • 1 part  Salt
  • 1 part Ginger powder
  • 1 part Coriander leave
  • 1 part Cardamon powder
  • 1 part Nutmeg

Peri Peri Chicken Preparation Method

  1. Spatchcock your chicken first (removing the backbone)
Begin by spatchcocking your chicken

2. Using paper towels, pat the chicken dry.

3. In a bowl, combine olive oil and peri peri chicken rub. Apply the mixture liberally to your chicken.

Apply the Peri-Peri seasoning to your chicken

4. Season your chicken with Peri Peri.

5. Give your chicken a five-minute rest so the rub will stick to it.

6. Put the chicken in the rotisserie basket and prepare your lit hardwood lump charcoal to roast it on the jumbuck mini spit. Depending on how hot the charcoal is, roast the chicken in 45minutes to an hour.

7. Slice the Potatoes and seasoned with Peri Peri Rub. Put them on a mini spit and into the rotisserie tumbler cage. To help speed up the process, parboil your potatoes before spit roasting.

8.Use the leftover olive oil and peri peri rub mixture to prepare your corn. Cook them until they are beautifully charred by placing them directly over the coals. It is best to turn the corn every two seconds or so when cooking it over charcoal to avoid burning. The Cyprus Grill’s automatic rotating skewers are useful

9. When the temperature of your chicken reaches 75° celsius, or 165° Fahrenheit, it’s time to remove it.

10. After your chips are crispy and golden, remove them and serve them with the chicken and corn!
