Cooking on a spit can be satisfying, but you must balance the meat on the skewer to get a smooth, even cook. If you are preparing chicken or boneless meat, this can be simple. But, this might occasionally be challenging when you’re cooking a full animal, such as a pig or a lamb.
A counterweight becomes your best friend at this point. When the meat is unbalanced, the spit motor is subjected to the unneeded effort, which finally damages the internal gears. Uneven cooking will also result from an imbalanced spit. By allowing the skewer to turn at an even rate and removing any strain from the motor, using a counterweight produces an even cook and a motor that is in good condition.
Rotate your skewer carefully in your palm to see if it’s balanced. It will be necessary to balance your meat if it falls off the prong in a moment. Re-test it after attaching the counterbalance in opposition to the heavier side. You are prepared to move once you have a nice spin.
